Firm, dense, and slightly salty, this aged cheese has notes of goat’s milk caramel, with a toasted, nutty finish.  Our flagship aged cheese made in “Stanislaus” county of our high quality goat “Capra” milk which has been vat pasteurized.  The semi-hard paste is a perfect balance of creamy and dry.  The mild creamy flavor lends notes of goat milk caramel, and finishes with a mild olive finish from the sea salt brine.
