Farmstead Cheese Plant
The heart of our Family Farm is no doubt the cheese plant. Without this main hub all the wonderful milk that the land and livestock produce would have no place to be transformed into delectable cheese. Our small factory has evolved progressively from the small 800 square foot room where it all began.
Since that time we have recently expanded our production facility, as well as upgraded our equipment. Presently Nicolau Farms has the capability of producing cheese around the clock if we so choose. Of course we still maintain our key processing methods such as vat pasteurization and small batch production. These labor intensive steps are part of what insures the highest quality cheese which is produced at Nicolau Farms.
